Dabinett, discovered in a Somerset hedgerow in the early 1900s, is one of the quintessential bittersweet apples of England’s West Country cider tradition. Known for its exceptionally high tannin levels—making it far from an ideal eating apple—it excels in crafting deeply expressive, full-bodied cider. This single-varietal cider is rich and complex, unveiling robust flavors of baked apple, caramel, and dark berries, along with the classic bittersweet nuances of hay and leather.
